Serves 2
Salad
- 50g rocket leaves
- 2 Carrots made into ribbons
- Half a cucumber made into ribbons
- Half an avocado cut in cubes
- 2 tbsp Sunflower Seeds
- 2 tbsp Pumpkin Seeds
- 1 tbsp Sesame Seeds
- Olive Oil
In a salad bowl add rocket, carrots, cucumber and avocado.
Lightly roast all the seeds in a dry frying pan over medium-low heat for 3 minutes. Drizzle over a little olive oil, toss some salt and continue to dry-fry until golden.
Sprinkle over the salad then drizzle over the miso dressing and serve.
Miso Dressing
- 2 tbsp white miso paste
- 125ml white balsamic vinegar
- 3 tbsp sesame oil
- 1 tsp grated ginger
- 1 tbsp raw honey
- 1 tsp tamari
- 1 tsp sesame seeds
- 1 tbsp water
Whisk all ingredients together and drizzle over the salad.
